New Year’s Resolutions You Can Keep

 

1. Gain weight. At least 30 pounds.
2. Stop exercising. Waste of time.
3. Read less. Makes you think.
4. Watch more TV. You’ve been missing some good stuff.
5. Procrastinate more. Starting tomorrow.
6. Stop bringing lunch from home: Eat out more.
7. Get in a whole NEW rut!
8. Spend your summer vacation in Cyberspace.
9. Don’t eat cloned meat.
10. Create loose ends.
11. Get more toys.
12. Get further in debt.
13. Don’t believe politicians.
14. Break at least one traffic law.
15. Avoid airplanes that spontaneously drop 1000 feet.
16. Don’t swim with piranhas or sharks.
17. Associate with even worse business clients.
18. Spread out priorities beyond ability to keep track of them.
19. Wait around for opportunity.
20. Focus on the faults of others.
21. Mope about faults.
22. Never make New Year’s resolutions again.

Featured Recipe:  Cooked Beef Sauté with Onions and Potatoes

After all of the holiday and rich party foods I don’t know about you, but I just want to get back to basics. Just give me a good old-fashioned meat and potato kinda dinner.

I WANT BEEF!!! That’s what I have for you today.

This recipe is designed to use up left-over roast beef. If you have none – not to worry. Just go to the deli and get some cooked beef.

This recipe comes from Henry Lewis Creel’s Cooking For One Is Fun.  I adapted it for two people here. However, the recipe can be easily doubled or tripled.

Mr. Creel’s recipe uses thinly sliced beef, but for my taste that overcooks the beef. So I use medium thick beef slices. His recipe also calls for less butter (2 teaspoons.) I find that is not enough to sauté the onion and potatoes properly. Mr. Creel’s recipe does not specify what kind of wine vinegar. I use red.

For such a simple meal it packs a huge wallop of taste . The mix and layering of the different flavors is just incredibly delicious! 

This dish is also very filling. Add to that how quick and easy it is to make and you have  a real winner here!

Here is what you will need for 2 people:

1 medium potato peeled

Salt and pepper

1-2 tablespoons butter

2 onions coarsely chopped

½ pound cooked beef*

1 small garlic clove minced

¼ teaspoon red wine vinegar

Chopped parsley.

*From leftover roast, or I often just purchase 1-2 medium slices from a deli.

Here is what you do:

Place the peeled potato in cold water to cover. Add the salt and pepper. Bring to a boil and simmer 20 minutes, then drain.

TIP: I find that if I turn the potato over about half way through the cooking, it does not stick to the bottom of the pan.

While the potato is simmering roughly chop the onions. Also mince the garlic very fine.

When the potato is done let it cool slightly and you can handle it, and then cut  into ¼ inch slices.

Melt the butter in a pan and add the onion. Do not add the garlic yet. Just the onion. Sauté until browned and caramelized.

Add the potatoes and cook about 5 minutes more until warmed through, turning once during the cooking.

Add the beef slices and cook until warmed through, no more than 5-6 minutes. Just warm it up.

Sprinkle with the minced garlic, the vinegar, and if you wish you can add more salt and pepper. Plate and sprinkle with the parsley.

Serve with a salad and a vegetable such as peas or carrots.

1 medium potato peeled                   $0.50

1-2 tablespoons butter                      $0.30

2 onions coarsely chopped                 $0.70

½ pound cooked beef*                     $3.30

1 small garlic clove minced                $0.10

¼ teaspoon red wine vinegar            $0.05

Chopped parsley.                             $0.05

Salt & Pepper

Total Cost = $4.28
Cost per person (2) = $2.14

And in a 2007 post she (?) says she received it in an email with this tag, “adapted from MountainWings,” but with no author or attribution.
